Open the chickpeas and pour them into a strainer, rinse them under cold water to remove the excess canning liquid. Shake off any extra water then set aside to drain for a couple minutes more.
Add the rinsed and strained chickpeas to a robot coup or blender followed by the garlic, lemon juice and seasoning salt ( Savory Seeker Seasoning Salt here ). Next attach the lid to the mixer and pulse the machine a few times, this will help break everything down. Next turn the mixer on low and slowly drizzle in the olive oil a little bit at a time.
Word to the wise: You want to add the olive oil slowly as if you add to much you cannot remove it.
During the mixing you want to stop every so often to scrape down the sides of the bowl. Making sure you have everything incorporated.
When the mixture becomes smooth, stop the machine, and give your homemade hummus a little taste. This is the perfect time to find out if you need to add more salt, a touch of lemon or any extra flavoring you might enjoy, like fresh herbs or even chili flakes for those who love a little spice in their life.
Once you are happy with the flavor of your homemade hummus, use a spatula and scrape all the tasty goodness into a container. Place the container in the fridge to cool off uncovered for about an hour or so. You want to leave it uncovered so that as it is cooling down the condensation doesn’t collect on the lid and fall back into your hummus.
