Ingredients:

Guacamole:
– Avocado, mashed
– White Onion, minced
– Cilantro, minced
– Garlic, minced
– Lime, quartered & juiced
– Paprika
– Jalapeno, minced
– Salt & Pepper

Scallop Ceviche:
– Scallops
– Mango, medium diced roughly same size as scallops
– Sweet Onion, minced
– Tomato, small diced
– Cilantro, finely chopped
– Lime Juice
– Orange Juice
– Chili Flakes
– Salt

Method:

Ceviche:
Combine all ingredients and let set in fridge.

Guacamole:
1. Smash avocados, then add all ingredients to taste.

Spoon Ceviche mixture into dish, top with Guac & garnish with tortilla chips.

Pro Tip: Use paprika and jalapenos for desired heat.
