When you make sourdough bread at home you inevitably end up with all kinds of extra bread. What to do with those extras becomes the question. We explored the various opportunities for bread – Croutons and little Bread Bites baked in the oven, all are delicious yes, but we wanted more.
So what to do next?
Matcha Sourdough French Toast, of course!
Oh man, what a win. The sourness of the bread paired perfectly with the tartness of the Matcha and topping with powdered sugar dustings ( also mixed with Matcha ) and a drizzle of Agave, the flavors simply make your tastebuds sing.
But don’t just take our word for it ( or do ), and give the recipe a try!
Ingredients
1 c Oat Milk( any milk works as well )
1/3 c Heavy Whipping Cream
1 Tbl Matcha Powder
1 Tbl Agave
¼ Tsp Cinnamon
1 Large Egg
Sugar Topping:
2 Tbl Powdered Sugar
1 Tsp Matcha Powder
Matcha Sourdough French Toast Method
- In a medium sized bowl throughly mix matcha powder and oat milk until all of the matcha powder is incorporated and there are no lumps.
- Add Whipping Cream, Agave, and Cinnamon to the Matcha Oat Milk mix and stir well.
- Mix powdered sugar and 1 tsp Matcha powder together in a small bowl and set aside for later.
- We use our Homemade Sourdough Bread cut into ¼ inch thick slices. You can use any bread like but we love the sweet and tangy flavor combo you get mixing the Matcha and the Sourdough.
- Dip the Sourdough bread into the Matcha liquid mix ( say that 3x fast ) and let it hang out for a minute or so to absorb some of that Matcha deliciousness. The dryer your bread the longer you should soak it.
- Drop your soaked piece of bread right onto a medium hot griddle or pan that has been sprayed with a little oil or rubbed with Butter. Cook 1-2 minutes on each side.
We have found this little oil mister to come in super handy and you get to use any oil you prefer. - I like to turn the oven on warm and place a sheet tray inside so I have a place to store my cooked French Toast while I finish up another next batch or two
- When ready to eat, layer your Sourdough Matcha French Toast on a plate and sprinkle with powered Matcha mix and drizzle with a little Agave.
- Dig in and enjoy.
P.S.
A little breakfast sausage on the side is always a tasty addition. We really enjoy the breakfast sausage links found at our local Albertson’s here in Las Vegas if you need any options 😉

Thank you, we would love to hear your feedback when you do.
I love French toast. I’ve only made more traditional French toast but now I am excited to try your fun twist on the classic dish.
ooh yes, let us know what you think. We find that traditional we find this version is a little more balanced, traditional french toast can get too sweet sometimes.
I love eating sourdough bread but have never made it. The french toast sounds delicious so I guess I should try baking both. Not sure I would have extra though since bread can go pretty fast in this house!
HaHa we absolutely love sourdough as well and once you start making it from scratch at home it is even better!
Don’t worry about not having enough, if you are anything like us once you start making fresh bread you end up making it ALL the time. Let us know how it turns out when you make a batch, we love to hear feedback.
