Gather all of your ingredients together and weigh them out. Next turn on your oven and preheat it to 350º. While your oven is heating up, add all of the ingredients except the oats, to a pan and melt on a low heat.
Once everything in the pan has dissolved and been throughly mixed it should look like a smooth caramel sauce. Don’t worry about the coconut oil staying separate, it will incorporate just fine when the oats are added.
Once your sauce is ready add in the oats and mix well to thoroughly combine the two.
The oats should absorb all of the liquid and be a touch sticky.
Next place the oat mixture on a sheet tray lined with parchment paper or a silicone baking mat.
Then using a spatula and a bench scraper flatten the mixture into a rectangle. You want to make sure everything is even and about 1/4” thick.
With your oven preheated to 350º, place your sheet tray in the oven on the center rack.
Bake for 15-18 minutes or until light brown in color. Be careful here as they can burn very easily in the last minute or two. We always err on the side of caution. It’s easier to put them back in but once they burn, all your effort is wasted and you’ll have to start again. Wait a few minutes then place the large granola bar on a wire rack to cool.
After your granola block is cooked and cooled it’s time to cut.
Grab a chef knife and divide the giant block into bars or even little chunks.
Really it is entirely up to you on how you want your bars to look.
