Creamy deliciousness awaits you with this homemade treat, leaving you never wanting store bought gelato ever again. The recipe here has Raspberry but you can add just about anything to this tasty gelato base. 

Ingredients

Gelato Base
2 c Whole Milk
1 c Heavy Cream
4 Egg Yolks
1/2 c White Sugar
1/2 c White Chocolate, Shredded (mini chips work amazing)

Raspberry Syrup
8 oz Raspberry
2 tbl White Sugar
2-4 tbl Water
Add all ingredients to a sauce pan and simmer until the raspberries are soft and starting to break down.
Blend the raspberry mix then strain for a smoother sauce.

Steps

  1. Add the cream and milk to a sauce pan and heat until warm and starts to foam, then remove from the heat.
  2. In a separate bowl beat together egg yolks and sugar until frothy, then carefully add the cream mix stirring the entire time.
  3. Add the mixture back into a sauce pan and heat until the mixture starts to thicken and becomes nappe (thick enough to coat the back of a spoon).
  4. Pour the mixture through a fine mess strainer or a sieve into another bowl then add the raspberry syrup cover and chill for four hours or even over night.
  5. When the mixture is nice and cold add it to your preferred ice cream maker and freeze according to the machines instructions until just firm. A few minutes before the gelato is firm add in the white chocolate.
  6. Put the gelato into containers and place in the freezer to harden the rest of the way, usually about 24 hours until it is perfect.
  7. Scoop serve and enjoy. We like to garnish with fresh raspberries and a little mint.
