Its Hatch Chile Pepper season again and we have put together a wonderfully tasty little recipe book.
These incredibly delicious peppers are available once a year from August to September and are grown and harvested in Hatch, NM.
There are two types of Hatch Chile Peppers, hot and sweet, but we prefer the hot ones. They have a good heat level that is not overpowering and can be eaten with or in a variety of dishes.
Once roasted and peeled they are incredibly versatile and the recipes they can be used in are only limited to your imagination.
We usually buy them a case at a time, equaling about 25 pounds.
We then roast and peel the peppers, make a bunch of goodies, then freeze the extras.
